Easter Sunday is just around the corner, and if you’re after something sweet, fun, and easy to share, this Easter Rocky Road is the ultimate treat. My mum hosts Easter lunch every year, so I wanted to bring along a dessert that everyone could enjoy after the meal. I’ve got two little nieces, so I made sure to pack it with all the treats we loved growing up—chocolate, marshmallows, lollies, and a few festive extras on top.
It’s colourful, nostalgic, and couldn’t be easier to make. Just melt, mix, and chill—then slice it up and watch it disappear. Wishing you and your loved ones a happy, chocolate-filled Easter!

Tips for the best Rocky Road
Use a mix of textures – the best rocky road has a balance of crunchy, chewy, and soft. Biscuits give it structure, while marshmallows and snakes add colour and flavour.
Don’t over mix – Once the chocolate goes in, mix quickly but gently. Over mixing can cause the chocolate to start setting before you pour it into the baking tray.
Work quickly – Have all your ingredients chopped and ready before melting the chocolate so you can combine everything while it’s still warm and easy to work with.
Line your tin well – Use baking paper with overhang so it’s easy to lift the slab out and slice.
Toppings last – If you’re using delicate chocolates like bunnies or eggs on top, press them in after the mix is in the tin so they stay whole.

Rocky Road Variations
Want to switch things up or use what’s already in your pantry? Here are a few ways to put your own spin on it:
- Nuts – Add a handful of roasted almonds, pistachios, or crushed peanuts for extra crunch.
- Fruitier version – Swap out snakes for chopped dried apricots, sultanas, or freeze-dried raspberries.
- Biscuit swap – Not a Scotch Finger fan? Use Teddy Bear biscuits, or even a choc chip cookie instead.
- Extra indulgent – Stir through some white chocolate chunks or drizzle melted white chocolate over the top before setting.
- Go dark – Use dark chocolate instead of milk chocolate if you prefer something richer (or want to balance out the sweetness).
- Festive feel – Sprinkle the top with mini M&Ms, speckled eggs, or colourful sprinkles before the chocolate sets.

Serving & Presentation Tips
- Cut the rocky road into bite-sized squares and serve on a cake stand or wooden board.
- Wrap individual pieces in baking paper or cellophane and tie with string for an Easter gift.
- Stack squares in a tin or box and bring it as a gift to your host.

Make-Ahead & Storage Tips
Rocky road is great for making ahead. Just place it in the fridge overnight and it’s good to go the next day. It’ll keep well in the fridge for up to a week—just store it in an airtight container. You can even freeze it if you want to make a batch in advance!

500 g Cadbury Dairy Milk chocolate
250 g Scotch Finger biscuits, broken into bite-size chunks
200 g marshmallows, halved
200 g snakes lollies, chopped into small pieces
KitKat Mini Milk Chocolate Easter Bunnies, for topping
8 Cadbury Caramilk Mini Chocolate eggs, halved, for topping
Directions
- Line a tray (approx. 30cm x 20cm) with baking paper, leaving some overhang.
- In a heatproof bowl, melt the Cadbury Dairy Milk in the microwave in 30-second bursts, stirring until smooth.
- Add the Scotch Finger biscuits, marshmallows and snakes to the bowl, stirring to coat evenly.
- Press the mixture into the lined tray and smooth the top with the back of a spoon.
- Press the Kit Kat Bunnies and Caramilk eggs gently into the top. Space them out so each serve gets a bit of everything.
- Refrigerate for at least 2 hours or until completely firm.
- Cut into 8–10 generous squares or bars, ideally with one bunny and egg half per piece.
