Ingredients
1 tbsp olive oil
1 large leek, sliced (white and pale green parts only)
½ medium brown onion, finely chopped
3 garlic cloves, finely chopped
2 medium carrots, diced
2 celery ribs, diced
2 whole bay leaves
1 whole raw chicken (approx. 1.3kg)
250g pasta of choice
2 cups baby spinach
Sea salt and cracked black pepper

For the chicken marinade:
500g chicken thigh fillets, cut into bite-sized pieces
Zest of ½ lemon
1 garlic clove, minced
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
For the Risoni:
3 zucchinis, thinly sliced into half-moons
1 tablespoon olive oil

2 asparagus spears, sliced on a diagonal

RHUBARB & BERRY CRUMBLE
Ingredients
600g rhubarb, chopped into 2-3cm pieces
1 cup frozen mixed berries (strawberries, blueberries, raspberries)
1/2 orange (about 1-2 tbsps)
1–2 tbsp honey
1 tbsp cornflour (corn starch)
For the crumble topping:
1 cup plain flour
½ cup brown sugar
1 tsp ground cinnamon
200g cold butter
½ cup rolled oats
½ cup shredded coconut

400g baby potatoes, halved

1 large red capsicum, sliced
200g green beans, trimmed and halved

1 red chilli, finely sliced
Roasted peanuts or cashews
Steamed jasmine rice
