Ingredients

  • Chocolate Base:
  • 300 g Cadbury milk chocolate, chopped

  • 150 g Caramilk chocolate, chopped

  • 2 tbsp coconut oil (or any neutral-flavoured oil)

  • Mix-ins:
  • 120 g Scotch Finger biscuits, roughly chopped

  • 100 g red frogs or raspberry lollies, halved

  • 100 g mini marshmallows, halved

  • 100 g M&M’s Red & Green Christmas Chocolate

Directions

  • Line a 20cm (8-inch) square pan with baking paper, ensuring the paper hangs over the edges for easy removal.
  • Place the Caramilk chocolate and 1 tablespoon of coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
  • In a separate microwave-safe bowl, repeat the process with the Cadbury milk chocolate and the remaining coconut oil.
  • Stir in the mix-ins into the Cadbury Milk Chocolate, ensuring everything is well coated.
  • Pour the mixture into the pan and spread it evenly with a spatula. Drizzle the melted Caramilk chocolate over the top, then sprinkle with M&M’s for a festive finish.
  • Refrigerate the pan for 2–3 hours or until the rocky road is completely set.
  • Remove the rocky road from the fridge about 20–30 minutes before cutting to allow for easier slicing. Serve and enjoy!
