Ingredients

  • 6 mini or medium-sized tortillas

  • 1 tbsp olive oil (for cooking)

  • Lamb:
  • 500g lamb mince

  • 1/2 brown onion, grated

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp fresh mint, chopped

  • 2 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp oregano

  • Salt & pepper

  • Toppings:
  • 1 cup cherry tomatoes, chopped

  • 1/2 cucumber, chopped

  • 1/2 red onion, chopped

  • 1/2 cup feta, crumbled

  • 1/4 cup pomegranate seeds

  • tzatziki sauce

Directions

  • In a bowl, combine the lamb ingredients. Shape the mixture into 6 even-sized balls.
  • Place a ball in the centre of each tortilla. Use your fingers or a spatula to gently press the lamb, spreading it evenly across the surface of the tortilla.
  • Heat a nonstick pan over medium heat. Place the tortillas lamb-side down in the pan. Cook for 3–4 minutes, until the lamb crisps up. Carefully flip the tortillas and cook the other side for another 2–3 minutes until crispy.
  • Top the lamb side of each tortilla with chopped tomatoes, cucumber, and red onion. Add crumbled feta, a dollop of tzatziki sauce and sprinkle with pomegranate seeds. Serve and enjoy!
