Ingredients

  • 2 tbsp olive oil, for cooking

  • 1kg beef mince

  • 8 medium-sized tortillas

  • Salt and pepper

  • Big Mac Sauce:
  • 1/2 cup mayonnaise

  • 2 tbsp pickles, finely chopped

  • 2 tbsp pickle juice

  • 1 tbsp brown onion, finely chopped

  • 2 tbsp tomato sauce

  • 2 teaspoons yellow mustard

  • 1/2 teaspoon paprika

  • Toppings:
  • 8 slices of cheese (cheddar or American-style)

  • Pickles, sliced

  • 1/2 small brown onion, finely diced

  • 2 cups iceberg lettuce, shredded

Directions

  • In a bowl, mix together the big mac sauce ingredients. Cover and refrigerate until needed.
  • Divide the beef mince into 8 equal portions.
  • Place a portion of the mince in the centre of each tortilla. Using your fingers or a spatula, press it evenly across the surface. Season with salt and pepper.
  • Heat a nonstick pan over medium heat. Place the tortillas beef-side down and cook for 2–3 minutes, until golden and crispy. Flip and cook the other side for 30 seconds or until the tortilla is lightly toasted.
  • Place a slice of cheese on top of the beef while it’s still hot so it melts slightly.
  • Top each taco with lettuce, onion and pickle slices. Add a generous spoonful of Big Mac sauce over the beef. Serve hot and enjoy!
