Ingredients

  • Salad:
  • 2 mangos, diced

  • 2 avocados, diced

  • 1 cucumber, diced

  • 1/2 a punnet of cherry tomatoes, halved

  • 1/4 cup Parsley, finely chopped

  • Chicken:
  • 500g chicken thigh

  • 1 tbsp paprika

  • 2 tbsp extra virgin olive oil

  • 1 tsp salt & 1/2 tsp pepper

  • 1/2 lemon, juiced

  • Dressing:
  • 1/2 lemon, juiced

  • 3-4 tbsp extra virgin olive oil

  • 1 tsp salt

Directions

  • Marinate the chicken in the marinade ingredients, then set aside in the fridge for at least 30 minutes.
  • Heat a pan over medium-high heat and cook the chicken for 5-7 minutes per side or until fully cooked. Let it rest for a few minutes, then slice it into strips.
  • Place the salad ingredients in a large serving bowl and add the sliced chicken on top.
  • In a small bowl, whisk together the dressing ingredients until well combined.
  • Pour the dressing over the salad and gently toss to coat everything evenly.
