Ingredients

  • 180g 70% dark chocolate (see note)

  • 1 cup blueberries

  • 1 cup raspberries

  • 1 cup rice bubbles

  • 1/2 cup shredded coconut

Directions

  • Break the dark chocolate into small pieces and melt it gently in the microwave in 20-second intervals, stirring until smooth.
  • Line a tin with baking paper and evenly scatter the blueberries, raspberries, and rice bubbles.
  • Once the chocolate is melted, pour it over the mixture and spread it into an even layer with a spatula. Gently stir to ensure the chocolate is evenly distributed.
  • Top the mixture with shredded coconut, pressing it down lightly.
  • Place the tin in the fridge for at least 1 hour to allow the chocolate to set.
  • Once fully set, break the bark into pieces and enjoy!

Notes

  • To melt the chocolate smoothly, you can add 1-2 teaspoons of neutral oil (like coconut or vegetable oil). However, high-quality dark chocolate often melts well without oil.
  • Don’t forget to line the tray with baking paper or the choc bark will stick to the bottom!
  • Keep your choc berry bark in an airtight container in the fridge for up to a week. You can also freeze it for longer storage.
