Loaded Beef Nachos

- Beef:
1 tbsp olive oil
1/2 brown onion, finely chopped
1/2 red capsicum, finely chopped
500g beef mince
2 tbsp tomato paste
1 tsp cayenne pepper
1 tsp cumin
1 tsp onion powder
- Nachos:
400g corn chips
2 cups grated Mexican cheese
400g canned black beans, drained
- Garnish:
Sour cream
Tomato salsa
Avocado
Jalapeno, deseeded and sliced
Tomato, finely chopped
Red onion, finely chopped
Fresh corn, finely chopped
Coriander, finely chopped
Directions
- Cook the beef:
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and capsicum. Sauté for 2-3 minutes or until softened.
- Add the beef mince and cook until browned, breaking it apart with a spoon.
- Stir in the tomato paste, cayenne pepper, cumin, and onion powder. Cook for 2-3 minutes. Remove from heat and set aside.
- Prepare the nachos:
- Preheat your air fryer to 200°C or oven to 180°C.
- In the air fryer drawer or oven tray, layer corn chips then beef, cheese and black beans.
- Repeat layers as needed, finishing with cheese on top.
- Cook for 10-15 minutes or until the cheese is melted.
- Top with garnishes of choice.
