Ingredients

  • Beef:
  • 1 tbsp olive oil

  • 1/2 brown onion, finely chopped

  • 1/2 red capsicum, finely chopped

  • 500g beef mince

  • 2 tbsp tomato paste

  • 1 tsp cayenne pepper

  • 1 tsp cumin

  • 1 tsp onion powder

  • Nachos:
  • 400g corn chips

  • 2 cups grated Mexican cheese

  • 400g canned black beans, drained

  • Garnish:
  • Sour cream

  • Tomato salsa

  • Avocado

  • Jalapeno, deseeded and sliced

  • Tomato, finely chopped

  • Red onion, finely chopped

  • Fresh corn, finely chopped

  • Coriander, finely chopped

Directions

  • Cook the beef:
  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and capsicum. Sauté for 2-3 minutes or until softened.
  • Add the beef mince and cook until browned, breaking it apart with a spoon.
  • Stir in the tomato paste, cayenne pepper, cumin, and onion powder. Cook for 2-3 minutes. Remove from heat and set aside.
  • Prepare the nachos:
  • Preheat your air fryer to 200°C or oven to 180°C.
  • In the air fryer drawer or oven tray, layer corn chips then beef, cheese and black beans.
  • Repeat layers as needed, finishing with cheese on top.
  • Cook for 10-15 minutes or until the cheese is melted.
  • Top with garnishes of choice.
