Ingredients

  • 2 boiled eggs, peeled and chopped

  • 1/2 avocado, mashed

  • 1/2 red onion, finely chopped

  • 1 tbsp chives, finely chopped

  • 1 tbsp goats cheese, mashed

  • 1/2 tsp chilli flakes

  • A squeeze of lemon juice

  • Salt and pepper, to taste

  • To serve:
  • 4 large lettuce leaves such as cos or iceberg; or

  • 4 pieces of toasted rye bread

Directions

  • In a small bowl, mash the filling ingredients with a fork. Mix until well combined.
  • Arrange the lettuce leaves or rye bread on a plate, then evenly distribute the mixture on top. Serve immediately and enjoy!
