1/2 avocado, mashed
1/2 red onion, finely chopped
1 tbsp chives, finely chopped
1 tbsp goats cheese, mashed
1/2 tsp chilli flakes
A squeeze of lemon juice
Salt and pepper, to taste
- To serve:
4 large lettuce leaves such as cos or iceberg; or
4 pieces of toasted rye bread
Directions
- In a small bowl, mash the filling ingredients with a fork. Mix until well combined.
- Arrange the lettuce leaves or rye bread on a plate, then evenly distribute the mixture on top. Serve immediately and enjoy!
