Ingredients

  • 800g pork mince

  • 420g Chow Mein noodles

  • 1.5 cups bean shoots

  • 3 spring onions, chopped

  • 2 cups green cabbage, shredded

  • 1 carrot, julienned

  • 2 garlic cloves, finely chopped

  • 1 1/2 cups snow peas

  • 2 tbsp peanut oil (or other cooking oil) for stir frying

  • Sauce:
  • 3 tbsp oyster sauce

  • 2 tbsp light soy sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp Chinese cooking wine (Shaoxing wine)

  • 2 tbsp honey

  • 2 tsp corn flour

  • 1/2 cup chicken stock

Directions

  • In a small bowl, whisk together oyster sauce, soy sauces, Chinese cooking wine, honey, corn flour, and chicken stock. Set aside.
  • Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add pork mince and cook until browned, breaking it apart as it cooks. Once browned, pour over a bit of the sauce onto the pork mince and set aside.
  • Push the pork to one side of the pan. Add another tbsp of oil to the empty side of the pan, then toss in the garlic. Cook for 1 minute, stirring frequently, until fragrant.
  • Next, add the carrots, cabbage, and snow peas to the skillet, stir-frying for 2 minutes until slightly softened.
  • Add the Chow Mein noodles and bean shoots to the pan. Pour in the sauce and toss everything together, ensuring the noodles are well coated.
  • Add the spring onions, stir well, and serve hot.
