Simple 4 Step Process
- Cook the pork with the sauce: Start by getting the pork nicely caramelised—it’s the key to the rich flavour in this recipe.
- Create a well in the centre: Add water to the pan, and nestle uncooked ramen or instant noodles in the middle. This step ensures the noodles sit in the water and keeps the pork caramelisation intact.
- Cook the noodles: After 45 seconds, flip the noodles over. In another 30 seconds, they’ll be soft enough to toss with the sauce and pork for even coating.
- Add veggies: Toss in a generous handful of your favourite vegetables. By the time the noodles are fully cooked, the liquid will have evaporated, leaving a glossy sauce.


Choosing Your Noodles
Any instant or ramen noodles work well here since we’re discarding the soup seasoning packet.
No instant noodles? No problem! This dish is just as delicious with other noodle varieties—dried or fresh, rice or wheat, even egg noodles.

One Pan Pork Ramen Noodles

2 packets instant ramen or other noodles of choice, discard seasoning packet
1 tsp oil
1/2 brown onion, thinly sliced
2 garlic cloves, minced
1 tsp ginger, grated
1 bunch bok choy, stems and leaves separated
1/2 cup mushrooms, sliced
500g lean pork mince
1.5 cups water, add more if needed
- Sauce:
1 tbsp dark soy sauce
1 tbsp oyster sauce
2 tsp hoisin sauce
Directions
- In a small bowl, mix together the sauce ingredients. Set aside.
- Heat the oil in a medium skillet over high heat. Add the onion, garlic, and ginger. Stir-fry for 1–2 minutes until fragrant and golden.
- Add the mushrooms and bok choy stems to the skillet. Stir-fry for 30 seconds until slightly softened.
- Add the pork mince to the skillet. Cook, breaking it apart with a spoon, until it turns from pink to light brown.
- Pour the sauce over the pork mixture. Stir well and cook for 2–3 minutes until the pork is coated and caramelised.
- Push the pork mixture to the sides of the skillet, creating a well in the centre. Place the ramen noodles in the well and pour water over them. Let the noodles sit for 1 minute, then flip. After another 30 seconds, gently separate the noodles with tongs or a fork. Toss them into the pork and vegetable mixture.
- Add the bok choy leaves to the skillet. Toss everything together for 1 minute, allowing the leaves to wilt and the sauce to thicken, coating the noodles evenly.
- Divide into bowls and serve immediately. Enjoy!
